主に「食品学」の授業を担当しています。
研究対象としては「腸内細菌」に興味があります。
いわゆる悪玉細菌が病気の発生や進行に影響することはよく知られていますが、まだまだ分からないことも多いため、食品ー腸内細菌ー病気の関係性の解明に寄与したいと考えています。
